Shahjahani Meetha ( Tomato Halwa )
Ingredients:
- 600 Grams Roma Tomatoes
- 120 Grams Sugar
- 160 Grams Clarified Butter
- 1 Tsp Cardamom Powder
- 1 Liter Milk
- 1/2 Cup Dry Fruits
- Red Food Coloring
- In a large nonstick deep skillet pour all the milk and reduce the milk on high flame.
- Keep stirring the whole time and scraping sides.
- It should reduce and give u a cream or light brown colored solid mix.
- In a big saucepan boil some water and blanch tomatoes.
- Let the tomatoes cool then peel the skin off and mash it well.
- In a pan heat the clarified butter and add mashed tomatoes, cardamom powder, sugar, and the reduced milk mix.
- Keep the flame on medium-high and stir well until you start seeing the butter floating on the sides.
- Add red food coloring to give it a better color.
- Garnish with the dry fruits and serve.
