Shahjahani Meetha ( Tomato Halwa )

Ingredients:

  • 600 Grams Roma Tomatoes 
  • 120 Grams Sugar
  • 160 Grams Clarified Butter
  • 1 Tsp Cardamom Powder
  • 1 Liter Milk 
  • 1/2 Cup Dry Fruits
  • Red Food Coloring 

Directions:

  • In a large nonstick deep skillet pour all the milk and reduce the milk on high flame.
  • Keep stirring the whole time and scraping sides.
  • It should reduce and give u a cream or light brown colored solid mix. 
  • In a big saucepan boil some water and blanch tomatoes. 
  • Let the tomatoes cool then peel the skin off and mash it well.
  • In a pan heat the clarified butter and add mashed tomatoes, cardamom powder, sugar, and the reduced milk mix. 
  • Keep the flame on medium-high and stir well until you start seeing the butter floating on the sides. 
  • Add red food coloring to give it a better color. 
  • Garnish with the dry fruits and serve.
