Jalapeno and Pineaple Rice
Ingredients:
- 1/2 Cup Rice
- 1 Cup Vegetable Broth
- 1 Jalapeno
- 2 Slices of Pineapple
- Salt to taste
- 1/4 Tsp White Pepper
- 1/8 Tsp Tumeric
- 1 Bay leaf
- 1 Tbsp Butter
- 1 Tbsp Oil
- Few drops of hot sauce ( Optional )
Directions:
- In a pot add Butter, Rice, Tumeric, Salt, Pepper, and bay leaf.
- Heat and sautee for 1 Min the add Broth.
- Bring to boil then cover and simmer for 10 Mins.
- On a grill or pan Char the Pineapple and Jalapenos.
- Cut them into small pieces.
- In a wok or non-stick skillet, Heat up the oil and toss the rice.
- Add Pineapple, Jalapeno, and Hot Sauce tossing them in the wok until fully mixed.
- Serve the Rice with Lemon-Garlic Yogurt Sauce.
