Jalapeno and Pineaple Rice

Ingredients:

  • 1/2 Cup Rice
  • 1 Cup Vegetable Broth
  • 1 Jalapeno
  • 2 Slices of Pineapple
  • Salt to taste
  • 1/4 Tsp White Pepper
  • 1/8 Tsp Tumeric
  • 1 Bay leaf
  • 1 Tbsp Butter
  • 1 Tbsp Oil
  • Few drops of hot sauce ( Optional )

Directions:

  • In a pot add Butter, Rice, Tumeric, Salt, Pepper, and bay leaf.
  • Heat and sautee for 1 Min the add Broth.
  • Bring to boil then cover and simmer for 10 Mins.
  • On a grill or pan Char the Pineapple and Jalapenos. 
  • Cut them into small pieces.
  • In a wok or non-stick skillet, Heat up the oil and toss the rice.
  • Add Pineapple, Jalapeno, and Hot Sauce tossing them in the wok until fully mixed.   
  • Serve the Rice with Lemon-Garlic Yogurt Sauce.
