Udon Noodle Soup

Ingredients:

  • 1/2 Tbsp Sesame Oil
  • 1 1/2 Tsp Ginger, Minced
  • 2 Tsp Garlic, Minced
  • 1 1/2 Tbsp Soy Sauce
  • 1 Tbsp Vinegar
  • 2 Cups Vegetable Broth
  • 1 Egg, Soft Boiled
  • 1/2 Cup Spinach
  • 3 Oz Udon Noodles
  • 1/2 Tsp Sriracha Sauce
  • 1/4 Cup Green Onions
  • 1/2 Cup Carrots
  • 1/4 Cup Caramelized Onions
  • 1 Tbsp Sugar

Directions:

  • In a large pot, heat sesame oil and add ginger, garlic to it. 
  • Cook for a few minutes or until soft.
  • Add soy sauce and vinegar cooking for another minute. 
  • Add Broth and cook for 5 minutes on simmer.
  • Add the onions and cook for another 10 minutes. 
  • In a separate pot bring some water to boil and cook spinach for 1 minute.
  • Remove spinach and put it in cold water.
  • Add Noodles, Sugar, and Sriracha sauce to the broth mixture and cook for 2 to 3 minutes.
  • Pour the soup into a bowl.
  • Top with egg cut in half, spinach, carrots,and green onions
  • Serve Hot.
