Ingredients:
- 1/2 Tbsp Sesame Oil
- 1 1/2 Tsp Ginger, Minced
- 2 Tsp Garlic, Minced
- 1 1/2 Tbsp Soy Sauce
- 1 Tbsp Vinegar
- 2 Cups Vegetable Broth
- 1 Egg, Soft Boiled
- 1/2 Cup Spinach
- 3 Oz Udon Noodles
- 1/2 Tsp Sriracha Sauce
- 1/4 Cup Green Onions
- 1/2 Cup Carrots
- 1/4 Cup Caramelized Onions
- 1 Tbsp Sugar
Directions:
- In a large pot, heat sesame oil and add ginger, garlic to it.
- Cook for a few minutes or until soft.
- Add soy sauce and vinegar cooking for another minute.
- Add Broth and cook for 5 minutes on simmer.
- Add the onions and cook for another 10 minutes.
- In a separate pot bring some water to boil and cook spinach for 1 minute.
- Remove spinach and put it in cold water.
- Add Noodles, Sugar, and Sriracha sauce to the broth mixture and cook for 2 to 3 minutes.
- Pour the soup into a bowl.
- Top with egg cut in half, spinach, carrots,and green onions
- Serve Hot.
