Spicy Vegetarian Ramen

Ingredients:

  • 2 Tsp Sesame Oil
  • 2 Tsp Ginger, Minced
  • 2 Tsp Garlic, Minced
  • 2 Tbsp Soy Sauce
  • 2 Tsp Rice Wine Vinegar
  • 1 Tbsp Gochugaru Pepper
  • 2 Cups Vegetable Stock
  • 1 Egg, Boiled
  • 1 Pack Raman Noodles
  • 1/2 Cup Spinach
  • 1/2 Cup Corn
  • 1/2 Cup Carrots
  • 1 Tbsp Green Onion
  • Sesame Seeds

Directions:

  • Heat sesame oil in a large pot.
  • Add garlic and ginger, cook for few minutes until soft and fragrant.
  • Add soy sauce, rice wine, gochugaru, and stock.
  • Bring to boil and simmer for 5 minutes.
  • Cook Raman noodles according to package instructions.
  • In a separate pot heat up water and cook, spinach, corn and carrots one by one.
  • Boil each item for few minutes or until seems cooked. 
  • Cut the egg in half, lengthwise.
  • Transfer the broth to a serving bowl.
  • Add Raman and top with all other ingredients.
  • Sprinkle some sesame seeds and green onion.
