Vegan Lobster Roll

Ingredients:

  • 8 Oz Hearts of Palm
  • 1 Tsp Lemon Juice
  • 1/2 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1 1/2 Tsp Parsley 
  • 2 Tsp Vegan Mayo
  • 1 Tsp Vegan Butter, Melted
  • 1 Tsp Cayenne Pepper
  • 2 Tbsp Vegan Mayo
  • 2 Tbsp Spicy Mustard
  • 2 Split Hot dog buns
  • 1 Lemon Slice

Directions:

  • In a small bowl mix 2 Tbsp of Mayo and Mustard.
  • In a big bowl mix together, Lemon Juice, Salt, Black Pepper, Parsley, Mayo, Cayenne Pepper, and Butter.
  • Add Hearts of palm and mix until fully combined, Break some of the palms into medium size pieces.
  • Toast the hot dog bun from the sides, open it up, and fill it with the mixture.
  • Sprinkle some Parsley and Cayenne Pepper on Top.
  • Serve with Mayo and Mustard Mixture, and Lemon Slice.
