Ingredients:
Loaf:
- 2/3 Cup Sugar
- 2/3 Cup Oil
- 3 eggs or 3/4 Cup Apple Sauce
- Juice and Zest of 1 lemon
- 1 Tsp Lemon Extract
- 1 Tsp Vanilla Extract
- 1 1/2 Cup All-Purpose Flour
- 2 Tsp Bakin Powder
- 1/4 Tsp Salt
- 3/4 Cup Sweetened Coconut Flakes
Glaze:
- 1 Cup Powdered Sugar
- 2 1/2 Tbsp Lemon Juice
- 1 Tbsp Oil
- 3 Tbsp Sweetened Coconut Flakes, Toasted
Loaf:
- Preheat oven to 350° F. Grease bread or cake pan with butter.
- In a big bowl whisk Sugar, Oil, Eggs, Lemon juice and zest, Vanilla and Lemon extract. Whisk until smooth.
- Start mixing in Flout, Baking Powder, and salt until combined.
- Fold in the coconut flakes.
- Scoop in the mixture into your desired pan
- Bake for 30 minutes or until a toothpick inserted comes out clean.
- Let the cake cool for few mins then remove from pan and pour the glaze through the middle
- Sprinkle some toasted coconut flakes on top.
