Lemon Coconut Mini Cakes

Ingredients:

Loaf:
  • 2/3 Cup Sugar
  • 2/3 Cup Oil
  • 3 eggs or 3/4 Cup Apple Sauce
  • Juice and Zest of 1 lemon
  • 1 Tsp Lemon Extract
  • 1 Tsp Vanilla Extract
  • 1 1/2 Cup All-Purpose Flour
  • 2 Tsp Bakin Powder
  • 1/4 Tsp Salt
  • 3/4 Cup Sweetened Coconut Flakes 
Glaze:
  • 1 Cup Powdered Sugar
  • 2 1/2 Tbsp Lemon Juice
  • 1 Tbsp Oil
  • 3 Tbsp Sweetened Coconut Flakes, Toasted
Direction:

Loaf:
  • Preheat oven to 350° F. Grease bread or cake pan with butter. 
  • In a big bowl whisk Sugar, Oil, Eggs, Lemon juice and zest, Vanilla and Lemon extract. Whisk until smooth.
  • Start mixing in Flout, Baking Powder, and salt until combined. 
  • Fold in the coconut flakes.
  • Scoop in the mixture into your desired pan 
  • Bake for 30 minutes or until a toothpick inserted comes out clean. 
  • Let the cake cool for few mins then remove from pan and pour the glaze through the middle
  • Sprinkle some toasted coconut flakes on top.
Lemon Glaze:
  • Whisk together Powdered sugar, Lemon Juice, and Oil.
  • Add some water if the mixture is too thick.
