Ingredients:
- 1/2 Cup Butter, Softened
- 1 Cup Brown Sugar
- 1 Egg, Room Temp
- 1/2 Tsp Vanilla Extract
- 1 Tsp cardamom powder
- 2 Cups All-Purpose Flour
- 3/4 Tsp Baking Powder
- 3/4 Tsp Baking Soda
- 1/4 Tsp Salt
- 1/3 Cup Greek Yogurt
- 1 3/4 Cup Raw Cashews
- Pre-Heat Oven to 375° F and grease a cookie sheet.
- In a large bowl beat butter and sugar until creamy.
- Add Egg and Vanilla and mix until fully combined.
- In a separate bowl mix Flour, Baking powder and soda, salt, and cardamom powder.
- Mix the dry ingredients to the butter mixture.
- In a pan lightly roast the cashews for few mins then blend them to get a fine powder.
- Add the cashew powder and yogurt to the mix and mix until fully combined
- Roll the dough into small balls and place on a cookie sheet a few inches apart and slightly flatten them.
- Bake for 8 to 10 minutes and cool for few mins
- Transfer to a wire rack to cool completely.
