Cashew Cookies

  Ingredients:

  • 1/2 Cup Butter, Softened
  • 1 Cup Brown Sugar
  • 1 Egg, Room Temp
  • 1/2 Tsp Vanilla Extract
  • 1 Tsp cardamom powder
  • 2 Cups All-Purpose Flour
  • 3/4 Tsp Baking Powder
  • 3/4 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/3 Cup Greek Yogurt
  • 1 3/4 Cup  Raw Cashews

    Direction:
    • Pre-Heat Oven to 375° F and grease a cookie sheet.
    • In a large bowl beat butter and sugar until creamy.
    • Add Egg and Vanilla and mix until fully combined.
    • In a separate bowl mix Flour, Baking powder and soda, salt, and cardamom powder.
    • Mix the dry ingredients to the butter mixture. 
    • In a pan lightly roast the cashews for few mins then blend them to get a fine powder.
    • Add the cashew powder and yogurt to the mix and mix until fully combined
    • Roll the dough into small balls and place on a cookie sheet a few inches apart and slightly flatten them.
    • Bake for 8 to 10 minutes and cool for few mins
    • Transfer to a wire rack to cool completely.
