Chocolate Chip Raspberry Cookies

Ingredients:

  • 1 Cup Unsalted Butter, Room Temp
  • 3/4 Cup Granulated Sugar
  • 3/4 Cup Brown Sugar
  • 2 Large Eggs, Room Temp
  • 2 Tsp Raspberry Extract
  • 3 Cups All-Purpose Flour
  • 3/4 Tsp Salt
  • 3/4 Tsp Baking Soda
  • 1 Cup Chocolate Chips
  • 1 Cup Raspberries

    Direction:
    • Preheat the oven to 350° F and spray the cookie sheet with cooking spray or line with parchment paper.
    • In a bowl mix butter and both sugars until light and fluffy.
    • Add Eggs and Raspberry Extract and mix until fully incorporated.
    • In a separate bowl whisk together Flour, Baking Soda, and Salt.
    • Rinse and dry the raspberries, then gently toss them using some of the flour mixtures and set aside. 
    • Add the flour mixture to the butter mixture and mix until just combined
    • Gently fold in the chocolate chips and raspberries. 
    • Scoop Cookie dough balls onto the baking sheet, keep them a couple of inches apart.
    • Bake for 11-13 minutes or until the edges are golden brown.
