Mango Bundt Cake

Ingredients:

Cake:

  • 3 2/3 Cups All-Purpose Flour
  • 1 1/3 Cup Powdered Sugar
  • 3 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 1/3 Cup Mango Puree
  • 2/3 Cup Vegetable Oil
  • 2 Tsp Mango Extract

Glaze:

  • 2 Cup Powder Sugar
  • 3 Tbsp Milk
  • 1 Tsp Mango Extract
  • Yellow Food Coloring

Directions:

Cake:

  • Pre-Heat oven to 350°F and grease a bundt tin with melted butter, make sure all the areas of the pan are coated.
  • In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt. 
  • Add mango puree, oil, and extract. Whisk until there are no lumps. 
  • Do not overmix this. 
  • Pour the batter on the bundt cake pan and bake for 40 minutes or until a toothpick comes out clean. 
  • Leave the cake to cool for 45 minutes before taking it out of the pan. 

Glaze:

  • In a bowl sift the powder sugar. 
  • Add Milk and Mango extract to the sugar.
  • Mix until thick and smooth, make sure the mixture is not too thick or too runny. 
  • Spoon the mix on the cake.
