Ingredients:
Cake:
- 3 2/3 Cups All-Purpose Flour
- 1 1/3 Cup Powdered Sugar
- 3 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 2 1/3 Cup Mango Puree
- 2/3 Cup Vegetable Oil
- 2 Tsp Mango Extract
Glaze:
- 2 Cup Powder Sugar
- 3 Tbsp Milk
- 1 Tsp Mango Extract
- Yellow Food Coloring
Directions:
Cake:
- Pre-Heat oven to 350°F and grease a bundt tin with melted butter, make sure all the areas of the pan are coated.
- In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
- Add mango puree, oil, and extract. Whisk until there are no lumps.
- Do not overmix this.
- Pour the batter on the bundt cake pan and bake for 40 minutes or until a toothpick comes out clean.
- Leave the cake to cool for 45 minutes before taking it out of the pan.
Glaze:
- In a bowl sift the powder sugar.
- Add Milk and Mango extract to the sugar.
- Mix until thick and smooth, make sure the mixture is not too thick or too runny.
- Spoon the mix on the cake.
