Vegetable Orzo Soup

Ingredients:

  • 1 Tbsp Olive Oil
  • 1 Cup Diced Onion 
  • 2 Cloves Garlic Minced
  • 1/2 Cup Diced Carrot
  • 1/2 Cup Diced Celery
  • 1 Can Diced Tomatoes
  • 4 Cups Vegetable Stock
  • 1/2 Cup Orzo 
  • 1 Tsp Italian Seasoning
  • Salt to taste
  • Pepper to taste
  • 2 Cup Spinach
  • Parmesan cheese 

Directions:

  • In a large saucepan heat oil over medium heat.
  • Add onion and saute until tender.
  • Add Garlic and cook for 30 Seconds. 
  • Add celery and carrot, cook for 3 to 5 minutes or until slightly tender.
  • Add diced tomatoes, stock, orzo, Italian seasoning, salt, and pepper.
  • Stir and combine everything and bring to boil.
  • Reduce the heat to simmer and cook for 15 to 20 minutes or until orzo is completely cooked.
  • Add the spinach, stir and cook for 1 to 2 minutes or until spinach has slightly wilted. 
  • Serve in a bowl and sprinkle some parmesan cheese on top.
