Ingredients:
- 1 Tbsp Olive Oil
- 1 Cup Diced Onion
- 2 Cloves Garlic Minced
- 1/2 Cup Diced Carrot
- 1/2 Cup Diced Celery
- 1 Can Diced Tomatoes
- 4 Cups Vegetable Stock
- 1/2 Cup Orzo
- 1 Tsp Italian Seasoning
- Salt to taste
- Pepper to taste
- 2 Cup Spinach
- Parmesan cheese
Directions:
- In a large saucepan heat oil over medium heat.
- Add onion and saute until tender.
- Add Garlic and cook for 30 Seconds.
- Add celery and carrot, cook for 3 to 5 minutes or until slightly tender.
- Add diced tomatoes, stock, orzo, Italian seasoning, salt, and pepper.
- Stir and combine everything and bring to boil.
- Reduce the heat to simmer and cook for 15 to 20 minutes or until orzo is completely cooked.
- Add the spinach, stir and cook for 1 to 2 minutes or until spinach has slightly wilted.
- Serve in a bowl and sprinkle some parmesan cheese on top.
