Easy Vegetables Fettucine

Ingredients:

  • 1 Cup Cherry Tomatoes
  • 1/2 Zucchini, Halved and cut in rounds
  • 1/2 Yellow Squash, Halved and cut in rounds
  • 2 Cloves Garlic, Minced
  • 1/4 Lemon Squeezed
  • Salt
  • Pepper
  • Parmesan Cheese
  • 2 Tbsp Olive Oil
  • 10 Oz Fettuccine Cook according to the direction
  • 1 Cup Pasta Water 

Direction:

  • Heat oil in a pan and add tomatoes and cook until they start to burst.
  • Add garlic, Zucchini, and Squash and cook for a couple of minutes until the veggies looked cooked. 
  • Add Salt and pepper to the mix and transfer cooked pasta and the reserved water.
  • Add Lemon juice and cook until most of the water is cooked.
  • Serve and garnish with the desired amount of Parmesan Cheese.
