Easy Vegetables Fettucine
Ingredients:
- 1 Cup Cherry Tomatoes
- 1/2 Zucchini, Halved and cut in rounds
- 1/2 Yellow Squash, Halved and cut in rounds
- 2 Cloves Garlic, Minced
- 1/4 Lemon Squeezed
- Salt
- Pepper
- Parmesan Cheese
- 2 Tbsp Olive Oil
- 10 Oz Fettuccine Cook according to the direction
- 1 Cup Pasta Water
Direction:
- Heat oil in a pan and add tomatoes and cook until they start to burst.
- Add garlic, Zucchini, and Squash and cook for a couple of minutes until the veggies looked cooked.
- Add Salt and pepper to the mix and transfer cooked pasta and the reserved water.
- Add Lemon juice and cook until most of the water is cooked.
- Serve and garnish with the desired amount of Parmesan Cheese.
