Apple Risotto

Ingredients:

  • 1 Cup Arborio Rice
  • 1 Apple
  • 1 Small Yellow Onion
  • 2 Tbsp Butter
  • 1/3 Cup White Wine
  • 1 Tsp Lemon Juice
  • 4 Cups of Apple Juice
  • 1/2 Cup Grated Parmesan Cheese
  • 1 Red or Green Chilli
  • Salt
  • Pepper
  • 1 Tsp Olive Oil

Directions:

  • Cut Apple, Onion and Chilli into small Dice. 
  • Heat a wide pan with butter. Cook the onion, and chilli for a few minutes or until soft.
  • Add Apple, Wine, Salt, and Pepper. 
  • Add olive oil and Rice. Toasting for a minute.
  • Add 1/3 Cup Apple juice at a time and let it dissolve in the rice while stirring occasionally. 
  • Mix in the parmesan Cheese and Lemon Juice.
