Ingredients:
- 1 Cup Arborio Rice
- 1 Apple
- 1 Small Yellow Onion
- 2 Tbsp Butter
- 1/3 Cup White Wine
- 1 Tsp Lemon Juice
- 4 Cups of Apple Juice
- 1/2 Cup Grated Parmesan Cheese
- 1 Red or Green Chilli
- Salt
- Pepper
- 1 Tsp Olive Oil
Directions:
- Cut Apple, Onion and Chilli into small Dice.
- Heat a wide pan with butter. Cook the onion, and chilli for a few minutes or until soft.
- Add Apple, Wine, Salt, and Pepper.
- Add olive oil and Rice. Toasting for a minute.
- Add 1/3 Cup Apple juice at a time and let it dissolve in the rice while stirring occasionally.
- Mix in the parmesan Cheese and Lemon Juice.
