Sweet Potato Red Pepper Soup
Ingredients:
- 2 Large Red Bell Pepper
- 1/2 Tbsp Vegetable Oil
- 1 Yellow Onion Diced
- 1 Clove Garlic Minced
- 2 Sweet Potatoes, Peeled and diced
- 2.5 Cup Vegtable Broth
- Salt
- Lime Juice
- Red Pepper Flakes
- White Pepper
Directions:
- Preheat oven to 450 F and roast the red peppers until skin is wrinkled and charred.
- Let the peppers cool, remove stem, skin and seeds then dice it.
- Heat oil in a large pot and add onion.
- Cook onions for 5 minutes or until translucent.
- Add garlic, cooking for couple minutes.
- Add Broth, Potatoes, White pepper and Salt.
- Bring the mix to a boil then cover and simmer for 20 to 25 minutes.
- Transfer the mix to a blender and add red pepper.
- Blend until somoot nad creamy.
- Transfer it back to the pot and heat it up.
- Add lime juice and red peppers flakes.
