Sweet Potato Red Pepper Soup

Ingredients:

  • 2 Large Red Bell Pepper
  • 1/2 Tbsp Vegetable Oil
  • 1 Yellow Onion Diced
  • 1 Clove Garlic Minced
  • 2 Sweet Potatoes, Peeled and diced 
  • 2.5 Cup Vegtable Broth
  • Salt
  • Lime Juice
  • Red Pepper Flakes
  • White Pepper

Directions: 

  • Preheat oven to 450 F and roast the red peppers until skin is wrinkled and charred.
  • Let the peppers cool, remove stem, skin and seeds then dice it.
  • Heat oil in a large pot and add onion. 
  • Cook onions for 5 minutes or until translucent. 
  • Add garlic, cooking for couple minutes.
  • Add Broth, Potatoes, White pepper and Salt. 
  • Bring the mix to a boil then cover and simmer for 20 to 25 minutes.
  • Transfer the mix to a blender and add red pepper.
  • Blend until somoot nad creamy. 
  • Transfer it back to the pot and heat it up.
  • Add lime juice and red peppers flakes.
