Chinese Almond Cookies

Ingredients:

  • 3/4 Cup All-Purpose Flour
  • 1/2 Cup Fine Almond Flour
  • 1/2 Cup Sugar
  • 1/2 Tsp Baking Powder
  • 1/8 Tsp Salt
  • 1/3 Cup Butter Melted
  • 1/4 Tsp Vanilla Extract
  • 1/4 Cup Almonds
  • 2 Tbsp Honey or Maple Syrup

Directions:

  • In a bowl Sift all-purpose flour, Almond flour, sugar, baking powder, and salt.
  • Whisk to combine them.
  • Add Butter and Vanilla Extract to the bowl. 
  • Mix until dough forms then cover and chill in the refrigerator for 30 minutes
  • Preheat oven to 350 F, and line cookie trays with parchment paper.
  • Take 2 Tsp of dough roll into a ball, place an almond on the center of the dough.
  • Lightly flatten the dough on a cookie tray, repeat until all the dough is used.
  • Brush with some honey or maple syrup.
  • Bake for 15 minutes or until the edges are golden brown.
