Mediterranean Rice Pilaf

Ingredients:

  • 1 Cup Long grain rice
  • 2 Cups Vegetable Broth
  • 1 Medium Onion, Diced
  • 1 Clove Garlic, Minced
  • 1 Tsp Tumeric
  • 1 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 Cup Silvered Almonds
  • 3 Tbsp Parsley, Chopped

Directions:

  • In a Medium Saucepan heat oil and butter.
  • Add Onions and saute for 2 to 3 minutes until translucent.
  • Add rice and toss until coated with oil. 
  • Add garlic and turmeric and cook for 2 minutes.
  • Add vegetable broth, salt, and pepper to the rice.
  • Bring the mix to boil then simmer for 15 to 20 minutes until rice is tender and liquid is absorbed.
  • Lightly toast the almonds in a pan and mix with the rice.
  • Serve and garnish with parsley. 
Note: Mix Hummus with rice.
