Ingredients:
- 1 Cup Long grain rice
- 2 Cups Vegetable Broth
- 1 Medium Onion, Diced
- 1 Clove Garlic, Minced
- 1 Tsp Tumeric
- 1 Tbsp Butter
- 2 Tbsp Olive Oil
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Cup Silvered Almonds
- 3 Tbsp Parsley, Chopped
Directions:
- In a Medium Saucepan heat oil and butter.
- Add Onions and saute for 2 to 3 minutes until translucent.
- Add rice and toss until coated with oil.
- Add garlic and turmeric and cook for 2 minutes.
- Add vegetable broth, salt, and pepper to the rice.
- Bring the mix to boil then simmer for 15 to 20 minutes until rice is tender and liquid is absorbed.
- Lightly toast the almonds in a pan and mix with the rice.
- Serve and garnish with parsley.
Note: Mix Hummus with rice.
