Vegetarian Philly Cheesesteak

Ingredients:

  • 1 Onion, Julienned
  • 1 Green Pepper, Julienned
  • 1 Red Pepper, Julienned
  • 1 Zucchini, Julienned
  • 1 Jalapeno, Julienned
  • 2 Cloves Garlic, Minced
  • 3 Slices Pepperjack Cheese
  • 4 Slices Provolone Cheese
  • 2 Tsp Salt
  • 2 Tsp Oregano
  • 2 Tsp Smoked Pepperika
  • 4 Mini French Rolls
  • 2 Tbsp Oil
  • 1/4 Cup Vegetable Broth

Directions: 

  • In a pot heat up oil and sautee onions for 2 to 3 minutes.
  • Add green pepper, red pepper, zucchini, jalapeno, and garlic.
  • Sautee for 10 minutes or until vegetables are softened.
  • Add 1 Tsp Salt, Oregano, and Smoked Pepperika.
  • Add the Vegetable broth and pepper jack cheese.
  • Cook and mix until cheese is melted and most of the broth is evaporated.
  • Pre-Heat oven to 400 F.
  • Open the french bread making sure to leave the pieces connected.
  • Fill the bread with cooked vegetables. 
  • Top it with Provolone cheese and bake for 2 to 3 minutes until cheese is fully melted.
  • In a small bowl mix the remaining oregano, salt, and smoked pepperika.
  • Sprinkle some of the mixtures on the top of the sandwich.
