Vegetarian Philly Cheesesteak
Ingredients:
- 1 Onion, Julienned
- 1 Green Pepper, Julienned
- 1 Red Pepper, Julienned
- 1 Zucchini, Julienned
- 1 Jalapeno, Julienned
- 2 Cloves Garlic, Minced
- 3 Slices Pepperjack Cheese
- 4 Slices Provolone Cheese
- 2 Tsp Salt
- 2 Tsp Oregano
- 2 Tsp Smoked Pepperika
- 4 Mini French Rolls
- 2 Tbsp Oil
- 1/4 Cup Vegetable Broth
Directions:
- In a pot heat up oil and sautee onions for 2 to 3 minutes.
- Add green pepper, red pepper, zucchini, jalapeno, and garlic.
- Sautee for 10 minutes or until vegetables are softened.
- Add 1 Tsp Salt, Oregano, and Smoked Pepperika.
- Add the Vegetable broth and pepper jack cheese.
- Cook and mix until cheese is melted and most of the broth is evaporated.
- Pre-Heat oven to 400 F.
- Open the french bread making sure to leave the pieces connected.
- Fill the bread with cooked vegetables.
- Top it with Provolone cheese and bake for 2 to 3 minutes until cheese is fully melted.
- In a small bowl mix the remaining oregano, salt, and smoked pepperika.
- Sprinkle some of the mixtures on the top of the sandwich.
