Oi Muchim ( Korean Cucumber Salad)
Ingredients:
- 1/2 Pound Pickling Cucumber
- 1/4 Medium Onion, Julienned
- 2 Green Onions, Finely Chopped white and light green part only
- 3 Cloves of Garlic, Minced
- 1 Tbsp Soy Sauce
- 1 Tbsp Rice Vinegar
- 1 1/2 Tbsp Gochugaru
- 1 Tbsp Sugar
- 1 Tbsp Sesame Oil
- 1 Tsp Sesame Seed
- 1/2 Tsp Salt
Directions:
- Thinly Slice the Cucumber to around 1/4 Inch Thickness.
- Put them in a bowl and sprinkle salt and toss.
- Let it sit for 30 minutes.
- Drain the cucumber and slightly press them to let some water out.
- Transfer them to a bowl and add the rest of the ingredients.
- Mix it well and let it sit in room temp for 30 minutes.
- Serve and sprinkle some sesame seed or green onion on top.
