Oi Muchim ( Korean Cucumber Salad)

Ingredients:

  • 1/2 Pound Pickling Cucumber
  • 1/4 Medium Onion, Julienned
  • 2 Green Onions, Finely Chopped white and light green part only
  • 3 Cloves of Garlic, Minced
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Rice Vinegar
  • 1 1/2 Tbsp Gochugaru
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame Oil
  • 1 Tsp Sesame Seed
  • 1/2 Tsp Salt

Directions: 

  • Thinly Slice the Cucumber to around 1/4 Inch Thickness.
  • Put them in a bowl and sprinkle salt and toss.
  • Let it sit for 30 minutes.
  • Drain the cucumber and slightly press them to let some water out.
  • Transfer them to a bowl and add the rest of the ingredients.
  • Mix it well and let it sit in room temp for 30 minutes.
  • Serve and sprinkle some sesame seed or green onion on top.
