Rice Pudding with Spiced Pear
Ingredients:
- 1 Cup Rice
- 4 Cups Whole Milk
- 1/3 Cup Sugar
- 1/4 Tsp Salt
- 1 1/2 Tsp Vanilla Extract
- 3 Tbsp Butter
- 1/2 Tsp Ground Cinnamon
- 2 Pear, remove seeds and cut into slices
- 2 Tbsp Brown Sugar
- 1 Tbsp Honey
Directions:
- In a large pot mix rice, milk, sugar, salt, and 1/4 Tsp cinnamon.
- Bring the mixture to simmer over medium-high heat.
- Keep stirring using a wooden spatula so the rice does not stick.
- Cook until rice is tender, around 20 minutes.
- Remove from heat and stir in 1 tbsp butter and vanilla extract.
- Transfer to a container and cover with plastic wrap.
- Make sure the plastic wrap is touching the rice so there is no build-up.
- Refrigerate and let it cool.
- In a skillet melt rest of the butter on medium heat.
- Add brown sugar, cinnamon, and honey.
- Bring the mixture to simmer.
- Add the Pears and gently stir and toss to coat in butter.
- simmer for 5 minutes or until the fruit is tender.
- let it cool then serve on top of the rice.
