Rice Pudding with Spiced Pear

Ingredients:

  • 1 Cup Rice
  • 4 Cups Whole Milk
  • 1/3 Cup Sugar
  • 1/4 Tsp Salt
  • 1 1/2 Tsp Vanilla Extract
  • 3 Tbsp Butter 
  • 1/2 Tsp Ground Cinnamon
  • 2 Pear, remove seeds and cut into slices
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Honey

Directions:

  • In a large pot mix rice, milk, sugar, salt, and 1/4 Tsp cinnamon.
  • Bring the mixture to simmer over medium-high heat.
  • Keep stirring using a wooden spatula so the rice does not stick.
  • Cook until rice is tender, around 20 minutes.
  • Remove from heat and stir in 1 tbsp butter and vanilla extract.
  • Transfer to a container and cover with plastic wrap.
  • Make sure the plastic wrap is touching the rice so there is no build-up.
  • Refrigerate and let it cool.
  • In a skillet melt rest of the butter on medium heat.
  • Add brown sugar, cinnamon, and honey.
  • Bring the mixture to simmer.
  • Add the Pears and gently stir and toss to coat in butter.
  • simmer for 5 minutes or until the fruit is tender. 
  • let it cool then serve on top of the rice.
