Jalapeno Rice Breakfast Bowl

Ingredients:

  • 1 Tsp Olive Oil
  • 1/2 Cup Rice
  • 3/4 Cup Broth
  • 1/4 Cup Onions, Chopped
  • 1 Jalapeno, Seeded and Chopped
  • 1/4 Cup Pico Salsa
  • 1/4 Cup Shredded Colby jack cheese
  • 1 Scrambled egg 
  • 1 Tsp Cilantro
  • Salt & Pepper to taste

Directions:

  • In a skillet, heat oil and sautee onions and jalapeno for 2 to 3 minutes.
  • Add Rice and cook for 2 minutes stirring constantly.
  • Add broth and bring to boil.
  • Lower heat and cover the skillet.
  • Cook it on simmer for 10 to 15 minutes.
  • Add Salt & Pepper to the rice and mix well using a fork.
  • Transfer the rice to a bowl and top with pico, cheese, scrambled egg, and cilantro.
