Jalapeno Rice Breakfast Bowl
Ingredients:
- 1 Tsp Olive Oil
- 1/2 Cup Rice
- 3/4 Cup Broth
- 1/4 Cup Onions, Chopped
- 1 Jalapeno, Seeded and Chopped
- 1/4 Cup Pico Salsa
- 1/4 Cup Shredded Colby jack cheese
- 1 Scrambled egg
- 1 Tsp Cilantro
- Salt & Pepper to taste
Directions:
- In a skillet, heat oil and sautee onions and jalapeno for 2 to 3 minutes.
- Add Rice and cook for 2 minutes stirring constantly.
- Add broth and bring to boil.
- Lower heat and cover the skillet.
- Cook it on simmer for 10 to 15 minutes.
- Add Salt & Pepper to the rice and mix well using a fork.
- Transfer the rice to a bowl and top with pico, cheese, scrambled egg, and cilantro.
