Huevos Rancheros with Salsa Roja

Ingredients:

  • 2 Corn Tortilla
  • 1 Large Egg
  • 1 Tbsp Salsa Roja
  • 2 Tbsp Cheese
  • Salt & Pepper to taste

Directions:

  • Warm up the tortillas on a pan.
  • Heat up a skillet, and melt some oil or butter in it.
  • Crack the egg and let it cook on a low flame.
  • Sprinkle salt, pepper, and cheese on top.
  • Cover and let it cook.
  • On a plate stack the tortillas.
  • Spread salsa on top of the tortilla.
  • Top with the fried egg.
  • Garnish with cilantro and serve.
