Apple Olive Oil Bundt Cake

Ingredients:

  • 1 Lb Granny Smith Apple, Diced
  • 1/8 Tsp Cadamom Powder
  • 1 2/3 Cup Granulated Sugar
  • 4 Large Eggs
  • 2 Large Egg Yolks
  • 1 Tbsp Orange Zest
  • 2 Tsp Orange Extract
  • 1 Cup Extra Virgin Olive Oil
  • 2 1/3 Cup All-Purpose Flour
  • 1 Tbsp Baking Powder

Directions:

  • Preheat over to 350 F and Grease a bundt cake pan.
  • In a large bowl whisk sugar, egg, egg yolk, and salt.
  • Whisk until it's light and fluffy.
  • Add Orange zest, orange extract, and cardamom powder.
  • Keep whisking and slowly pour olive oil. 
  • Make sure oil is being fully incorporated.
  • Sift flour and baking powder to the egg mix.
  • Fold the flour mix using rubber spatula until almost completely incorporated.
  • Fold in diced apples. 
  • Spoon the batter into the pan and bake for 1 hour or until golden brown and toothpick comes out clean.
  • Cool the pan for 30 minutes then transfer to wire rack.
  • Cool the cake completly and sprinkle with powder sugar.
