Apple Olive Oil Bundt Cake
Ingredients:
- 1 Lb Granny Smith Apple, Diced
- 1/8 Tsp Cadamom Powder
- 1 2/3 Cup Granulated Sugar
- 4 Large Eggs
- 2 Large Egg Yolks
- 1 Tbsp Orange Zest
- 2 Tsp Orange Extract
- 1 Cup Extra Virgin Olive Oil
- 2 1/3 Cup All-Purpose Flour
- 1 Tbsp Baking Powder
Directions:
- Preheat over to 350 F and Grease a bundt cake pan.
- In a large bowl whisk sugar, egg, egg yolk, and salt.
- Whisk until it's light and fluffy.
- Add Orange zest, orange extract, and cardamom powder.
- Keep whisking and slowly pour olive oil.
- Make sure oil is being fully incorporated.
- Sift flour and baking powder to the egg mix.
- Fold the flour mix using rubber spatula until almost completely incorporated.
- Fold in diced apples.
- Spoon the batter into the pan and bake for 1 hour or until golden brown and toothpick comes out clean.
- Cool the pan for 30 minutes then transfer to wire rack.
- Cool the cake completly and sprinkle with powder sugar.
