Jalapeno Cheedar Cornbread

Ingredients:

  • 2 1/2 Cup All-Purpose Flour
  • 1 1/2 Cup Yellow Cornmeal
  • 1/4 Cup Sugar
  • 2 Tbsp Baking Powder
  • 2 Tsp Salt
  • 2 Cup Milk
  • 4 Eggs
  • 8 Oz Butter, Melted
  • 1/3 Cup Jalapeno, Chopped
  • 12 Ounce Extra Sharp Cheddar Cheese

Directions:

  • In a large bowl mix Flour, Cornmeal, Baking Powder, Sugar, and Salt.
  • In a separate bowl mix Milk, Eggs, and butter until fully combined.
  • Add the dry ingredients to the wet ingredients.
  • Mix until there are no lumps.
  • Add most of the cheese, leaving some for the top of the bread.
  • Add Jalapenos and mix until just combined.
  • Let the mixture sit at room temp for 20 minutes.
  • Preheat oven to 350 F and grease cast iron pan or baking pan.
  • Put the pan in the oven while the mixture is resting.
  • Pour the mix into a hot pan and level the top and cover with the leftover cheese.
  • Bake for 30 to 35 minutes or until a tooth pick comes out clean.
