Jalapeno Cheedar Cornbread
Ingredients:
- 2 1/2 Cup All-Purpose Flour
- 1 1/2 Cup Yellow Cornmeal
- 1/4 Cup Sugar
- 2 Tbsp Baking Powder
- 2 Tsp Salt
- 2 Cup Milk
- 4 Eggs
- 8 Oz Butter, Melted
- 1/3 Cup Jalapeno, Chopped
- 12 Ounce Extra Sharp Cheddar Cheese
Directions:
- In a large bowl mix Flour, Cornmeal, Baking Powder, Sugar, and Salt.
- In a separate bowl mix Milk, Eggs, and butter until fully combined.
- Add the dry ingredients to the wet ingredients.
- Mix until there are no lumps.
- Add most of the cheese, leaving some for the top of the bread.
- Add Jalapenos and mix until just combined.
- Let the mixture sit at room temp for 20 minutes.
- Preheat oven to 350 F and grease cast iron pan or baking pan.
- Put the pan in the oven while the mixture is resting.
- Pour the mix into a hot pan and level the top and cover with the leftover cheese.
- Bake for 30 to 35 minutes or until a tooth pick comes out clean.
