Roasted Chickpea Gyro

 Ingredients: 

  • 1 Can Chickpeas
  • 1 Tbsp Olive Oil
  • 2 Tbsp Smoked Paprika
  • 1 Tsp Ground Black Pepper
  • 1 Tsp Cayenne Pepper
  • 1/2 Tsp Salt
  • 4 Pita Flatbreads
  • 1 Cup Tzatziki Sauce
  • 1/4 Red Onion, Sliced
  • 1/2 Cup Lettuce, Shredded
  • 1 Tomoato, Sliced

Directions : 

  • Pre Heat Oven to 400 F.
  • Pat dry the chickpeas and remove any skins that come off.
  • In a bowl gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt. 
  • Spread the chickpeas on a greased baking sheet and roast for 20 mins or until lightly browned. 
  • Spread tzatziki on a warm flatbread then sprinkle some chickpeas, add veggies, top with more sauce, and fold
