Ingredients:
- 10 Ounce Chopped Cabbage
- 1 Carrot, Julienned
- 1 Cup Roasted Corn
- 3 Jalapenos, julienned
- 4 Green Onions, Sliced
- 1 Tsp Salt
- 1 Tsp Paprika
- 1 Tsp Pepper
- 1/4 Tsp Ground Cumin
- 1/4 Cup Cojita Cheese
- 3/4 Cup Mayo
- 1/4 Cup Cilantro, Chopped
- 2 Tbsp Lemon Juice
Directions:
- In a large bowl mix together all the vegetables.
- In a small bowl mix mayo, lemon juice, and all other seasonings.
- Mix the mayo mixture into the vegetables.
- Add cheese and toss until combined
- Serve as is or on a burger.
