Directions:
- In a large saucepan boil water, salt, and 1 Tbsp. sugar.
- Remove the pan from heat and add all the flour.
- Mix until flour is incorporated.
- Return to heat and cook while stirring for 30 Seconds.
- Transfer the dough to a bowl and let it cool a little.
- Start mixing eggs into the flour. one egg at a time.
- Mix until the eggs are fully incorporated.
- Add vanilla extract and mix.
- Heat up oil to 370 F for frying.
- Mix sugar and cinnamon in a shallow bowl.
- Transfer the dough to a piping bag fitted with a large star tip.
- Pipe 6 Inch pieces into the oil and fry for 2 minutes or until golden brown.
- Drain the churros on a paper towel then roll them in the cinnamon-sugar mix.
- Serve with chocolate or rabri sauce.
