Roasted Vegtables Sandwich
Ingredients:
Directions:
- Slice the bread in half and slightly toast it.
- In a baking tray lay down all the vegetables.
- Coat the veggies with some oil, salt, and pepper
- Drizzle some of the Apricot sauce on top and bake for 10 minutes at 450 F
- Keep an eye on the veggies and make sure they don't start to burn.
- Start to assemble the sandwich by putting mayo on the bottom slice.
- Lay Zucchini, Tomate, Onion, and Pepper.
- Season with some salt and pepper then put cheese and toast it to melt the cheese.
- Close the sandwich and cut it in half.
- Serve with some Fries or your favorite side.
