Roasted Vegtables Sandwich

Ingredients:

Directions:

  • Slice the bread in half and slightly toast it.
  • In a baking tray lay down all the vegetables. 
  • Coat the veggies with some oil, salt, and pepper
  • Drizzle some of the Apricot sauce on top and bake for 10 minutes at 450 F
  • Keep an eye on the veggies and make sure they don't start to burn.
  • Start to assemble the sandwich by putting mayo on the bottom slice.
  • Lay Zucchini, Tomate, Onion, and Pepper.
  • Season with some salt and pepper then put cheese and toast it to melt the cheese.
  • Close the sandwich and cut it in half.
  • Serve with some Fries or your favorite side.
